Ok! So for all of you paleo eaters, did you know that white rice (not brown rice) is technically allowed under the paleo diet? I didn’t either…well, until the Internet told me so that it. Of course, thereare a lot of different schools of thought on what is and what isn’t Paleo and why…and I’m not on the Paleo diet. So that’s why my recipe is called “Paleo-ish Alfredo”.
According to my research and my best efforts, this recipe is Paleo, dairy free, yeast free, gluten free, nut free (except for coconut), corn free, egg free, and soy free. It’s using almost all unprocessed, whole foods, with the exception of the rice pasta. Oh yes, and this is seriously tasty stuff!
• 1 pkg Tinkyada white rice pasta
• 1 large head of califlower – chopped
• 2 tbsp olive oil
• 3 cloves garlic – minced
• 2 tbsp soy free Earth Balance butter (omit if strictly paleo)
• 1 c So Delicious unsweetened coconut milk or use 1 c of the water used to boil califlower
• 1 tsp garlic salt
• 1/2 tsp nutmeg
• 1 tsp ground mustard
• 1 tsp chili powder
• salt and pepper to taste
Begin with bringing water to a boil for the pasta in large pot #1. Add pasta to boiling water in pot #1, let cook until tender.
While pasta is cooking, chop califlower, then add to large pot #2. Cover the califlower with water and boil on high heat until tender. Once the califlower is done, drain and place in high powered food processor or blender (love my vitamix).
In a small skillet, heat olive oil on medium flame and sauté garlic until it just starts to smell amazing. Add to blender. Add coconut milk (or califlower water), butter, and spices. Blend until smooth. Pour over cooked, drained pasta. Enjoy!
